Tonight I made some Buffalo Chicken Fritters on the Blackstone Griddle. I used 2 lbs of chicken breast tenderloins and it was plenty for 5 people.

2 Lb. of Boneless and skinless chicken breast, small dice
2/3 Cup of Shredded mozzarella cheese
4 Tablespoons of Mayonnaise
6 Tablespoons of Buffalo Sauce (and extra to drizzle on top)
2/3 Cup of All-purpose flour
2 Egg
Salt & Pepper to taste
Olive Oil for Cooking
Ranch for Dipping
